Avocado Fetta & Mint Smashs

This is a super super easy recipe, if you could even call it a recipe! But posting it because it is so delicious and the easiest thing ever to make! Enjoy 🙂

Fudgy Choc-Coconut Crunch Bars
Yields 8

Chocolate Layer
  1. 2 tbsp coconut oil
  2. 2 tbsp cacao butter
  3. 3 tbsp cacao
  4. 1 tbsp lucuma
  5. pinch sea salt
  6. 3 tbsp raw honey
Crunch Layer
  1. 1 cup shredded coconut
  2. 7/8 dates
  3. pinch sea salt
  4. 1 cup buckinis
  5. 1/2 cup cashews
  6. 1 tbsp lucuma powder
Instructions
  1. Chop up the dates and remove the inner stones. Add the to a food processor and process until its a smooth paste.
  2. Add all other ingredients from the crunch layer except the buckinis and process until well combined
  3. Mix in the buckinis using a spoon and transfer into a small baking tray or dish, lined with baking paper. Press the mix firmly down into the tray.
  4. Put in the fridge for a couple of hours (or overnight) to set.
  5. Make the chocolate layer by melting the coconut oil and cacao butter together.
  6. Next add the other inredients and mix well until you have a uniform consistency.
  7. If it looks too thick, add a tbsp of warm water.
  8. Remove the crunch layer from the fridge and spread the chocolate evenly on top.
  9. Return to the fridge and set for about half an hour until the chcolate hardens.
