Brown Soda Bread with Crystallised Ginger & Thyme

Odlums brown soda bread mix makes this recipes so easy! This recipe is inspired by one of the recipes in my soon-to-be-launched cookbook, Behind the Half Door –  Stories of Food and Folk. In the book my co-author, Biddy, uses ginger in her signature soda bread and it is delicious! Look out for the book coming soon to Taste Ireland.

Brown Soda Bread with Crystallised Ginger & Thyme

Ingredients
  1. 500g Odlums brown soda bread mix
  2. 3-4 tbsp milk
  3. 1 tsp dried thyme
  4. 1 tbsp dried ginger, sliced
  5. pinch sea salt
Instructions
  1. Preheat the oven to 200 degrees.
  2. Add the bread mix to a large bowl and mix in the thyme, ginger and salt.
  3. Add the milk a little at a time until the dough comes together.
  4. Sprinkle some extra mix on a counter and knead the dough for a minute until it forms a circular loaf.
  5. Slice a large cross in the top.
  6. Bake for 40 minutes.
