Cheddar & Semi-Sundried Tomato Muffins

These muffins are a great healthy snack for when your on the go! If I have done a morning workout, I am always starving by the time lunch time comes and eat a massive lunch. By having a snack like these it keeps you satiated and your blood sugar levels under control!

Super easy to make and taste great hot or cold.

Cheddar & Sundried Tomato Muffins
Yields 5
Vegetarian, Gluten Free, Sugar Free

Ingredients
  1. 45g butter
  2. 10 semi sundried tomatoes, chopped
  3. 2 eggs
  4. 1 tbsp poppy seeds
  5. 50g vintage cheddar, chopped into cubes
  6. ¼ tsp bicarbonate soda
  7. 45g coconut flour
  8. pinch turmeric
  9. pinch sea salt
Instructions
  1. Preheat the oven to 170 degrees.
  2. Leave butter out to soften.
  3. Once soft, mix with the eggs and sundried tomatoes
  4. Mix in the remaining ingredients and stir thoroughly.
  5. Line a muffin tray with muffin cups and grease the insides.
  6. Pour the mixture evenly between 5 cups.
  7. Bake for 20 minutes.
  8. Remove & place on a tray to cool
