Christmas Series: Creamy Potato Gratin with Irish Rashers

One of my favourite meals at Christmas is potato gratin. You just can’t beat the creamy, cheesy, garlicky goodness! The Irish rashers are the cherry on top! 🙂

Christmas Series: Creamy Potato Gratin with Irish Rashers

Ingredients
  1. 1 tbsp olive oil
  2. 2 Irish Style Rashers
  3. 3 potatoes, peeled
  4. 4 cloves garlic, crushed
  5. 200ml cream
  6. 100g Kerrygold Vintage cheddar, grated
Instructions
  1. Preheat the oven to 180 degrees.
  2. Add olive oil to a non stick pan over high heat and fry the rashers for a minute on each side. Slice the rashers and set aside.
  3. Power boil the potatoes for 10 minutes.
  4. Run them under a cold tap and then slice thinly using a mandolin.
  5. Place them overlapping into a baking dish.
  6. Sprinkle garlic over each layer, then pour over the cream.
  7. Bake for 30 minutes, remove from the oven and add the rashers and cheese.
  8. Bake for a further 10 minutes.
